Aromas of spiced pear, white peach and a touch of honeysuckle contribute to a delicious varietal bouquet. These flavours are displayed on the palate with a subtle texture and balanced acidity making it a good friendly wine. This would pair well with seafood, chicken or soft cheeses.
Pig in the House Pinot Gris 2021
The 2021 growing season was pretty good for PInot Gris in our region. The variety benefited from good winter and spring rain, and unlike the previous few years of drought, the vines canopy was sufficient to provide good shading of the fruit zone. This shading, whilst increasing disease pressure from high humidity in the canopies micro climate, minimises sun exposure. Pinot Gris, is susceptible to having deep coloured skin with increased sun exposure, hence the benefit of having a shaded canopy.
Winemaking: The PInot Gris was harvested in 2 main lots, both around `12 baume. Both parcels yielded juice of good quality, with some pea protein and glutathione additives to ensure the resultant wine remains fresh. Fermentation of the free run juice was performed in a stainless steel tanks at 14 (degrees) C to maintain freshness, whilst aromatic yeasts were used to promote aromatics. Several blending trials were conducted to develop the best blend that displays varietal Pinot Gris characters. Filtration and bottling was undertaken in rapid succession to maximise the freshness of the wine.
