Tasting Notes
Ripe plum in colour, this Shiraz has aromas of plum and oven baked cherry pie. Ripe fruit flavours including Raspberry,blackberry and plum are enticing and well balanced by silky tannins. This wine is well matched with roast vegetables, pasta, pizza and grilled fish. Enjoy while fresh and vibrant or until the end of 2012.
Growing Season
2008 was another dry year in our region . We experienced bud burst on the 24th of September which was followed by a strong cane growth for the six weeks up to flowering. Conditions for flowering were excellent however fruit set was poor we believe due to the dry conditions. Verasion occurred in the second week of January and the ripening period was warm and dry . Harvest occurred on March 21st.
Winemaking
The grapes were crushed and de-stemmed prior to being transferred to a small stainless open fermentor. The must was inoculated with M2 yeast and fermentation took place between 24 and 26 degrees Celsius. The cap was plunged by hand at least three times a day. The wine was then pressed off skins at three baume. A portion of the wine (20%) was transferred to two year old French and American oak for maturatuion. The final blend was done in April 2009 and bottling occurred in May of that year.
